Yes, we made it around the holidays. But it’s good any time.
Good nutrition that supports good health can also taste good, as this healthy recipe for sweet potato toast shows. Easy, yummy flavors and oh-so good for us.
1. Slice a sweet potato into thin slices. I like to use the white sweet potato instead of the orange, but either work.
2. Toast it. You might have to toast it several times to cook it through. I use a toaster and my smoke alarm often goes off because I have to toast more than once. The key is to slice the sweet potato thin, so it cooks quickly in the toaster. But you can use the broiler–just turn it half way. I think that’s too much work so for me, it’s the toaster.
3. Slice a ripe avocado. Or mash it.
4. Top the sweet potato slice with avocado. Either slices or mash.
5. Eat it without any dressing OR dress it with a little balsamic vinaigrette.
That’s it. Simple to make.
Now, why use sweet potato? It has half the calories as a piece of toast and so much more of vitamin A, B6, B1, B2, niacin, vitamin C and potassium.
If you prefer bread, use a healthy bread–I like to use German brown bread or thick whole grain.
Put a little side salad with it and it’s a nice meal that’s healthy, too!
That’s an interesting twist! Sweet potato is awesome and could imagine it being a nice mix of flavors and textures. A little cinnamon may be good too
avocado is the one food I just can’t eat, even though I know how goof it is for you! This does sound liker something my husband would love!
This recipe is such a good one for lunch. I actually make something similar all the time.
Interesting combo. I have to try this. Sweet potatoes are yummy. We make fries with them or slice it really thin and make sweet potato chips. I will have to try this recipe of yours. Looks like a really healthy substitute for bread.
My daughter tried making sweet potato toast in the toaster the other day and it didn’t work out. We will have to try again.
Slice thinly.

Yay a recipe for avocados! I love them on toast with butter. I’ve never tried this before.
I love sweet potatoes. This is much healthier on toast than slathering on butter.
Love sweet potatoes but I’ve never heard of sweet potato toast. Interesting. As far as a sweet potato / avocado duo, that’s different. Never heard of it either. I may have to try it though, you’ve peaked my interest.
I love avocado and I love sweet potatoes. I never thought to mix the two together. I need to try this.
Yummy piled on yummy! Perfect!
Wow, I don’t know that I would have ever thought of pairing sweet potato and avocado together. But it sounds interesting.
I always read recipes for avocado toasts and get envious. Unfortunately, I have an intolerance to avocados. I like the idea of using sweet potatoes though. Thank you for the idea!
This looks amazing! I love everything involved. Thanks for sharing. I would have never thought about sweet potato and I’m so bored with avocado toast.
I love sweet potato, and have been wanting to give the sweet potato toast a try. This sounds like a great breakfast!
I’ve never heard of a white sweet potato before! I know my grocery store doesn’t have those! I love avocado toast and this sounds like a unique version. Definitely a fun alternative to using bread.
Love this, simple and easy but super healthy! I love sweet potatoes, you can pretty much use them in any recipe and they’re healthier than your average potato.
Yum, I am a huge fan of avocado toast! I haven’t tried it with sweet potato yet. I’ll have to do this!
I think that my brother and his wife would really enjoy this recipe. They both really like both sweet potatoes and avocadoes.
